We’ve previously covered the great news about Singapore’s hawkers and eateries receiving the Bib Gourmand Award from the Michelin Guide. But more good news comes into Singapore’s food and dining scene when the Michelin Guide awards it’s most coveted stars to some of Singapore’s best restaurants!
Each star rating is very important, for instance, we mentioned that in Chicago’s old Michelin Guide of 500 restaurants only a single restaurant was awarded 3 stars, only 4 restaurants were rated with 2 stars and 20 restaurants listed only got 1 star. This year with the Michelin Guide reaching Singapore and getting a taste of the richly diverse culinary experience Singapore has to offer, Michael Ellis, Michelin Guide’s International Director, was all praises with the dynamic culinary offerings in Singapore reflective of its unique cultural demographic.
How Do They Get Stars?
The Michelin Guide actually hires anonymous food inspectors on full-time basis consuming about 10 meals a week for the guide. There is a process of re-inspection of restaurants to check for consistency and they provide very detailed feedback about their whole experience and the meals they eat.
There is a strong focus on the quality of food, but they also inspect and give feedback on the establishment’s customer service, value for money, interior, cleanliness and even the linen they use. When they give feedback about food, it is also very detailed and specific including the quality and use of ingredients, creativity, culinary skills involved in cooking and preparing the dish, how the chef’s personality or image is carried out or defined into the dish and how well the flavors and mixtures go together.
“Star Sessions” are then held to consider these evaluations and decide on which restaurants gets awarded or loses stars.
